Cooking for friends this weekend? Try this easy-to-prepare, crowd-pleasing veggie dish
- 2 red onions
- 4 garlic cloves
- 1 tsp butter
- 1 tsp olive oil
- 540g pre-chopped squash (that’s two bags of the stuff from the supermarket – sometimes it has sweet potato in it too, and that’s fine)
- 1 tsp black pepper
- 2 good gratings of nutmeg (or 1 tsp ground)
- 3 stalks of fresh thyme (or 1 tsp dried)
- Small glass of dry white wine
- 1 x 400g tin of chickpeas
- 50g Parmesan
- 1 egg
- 100ml double cream
- 1 x 320g packet of chilled, pre-rolled puff pastry
- Flaky sea salt
- Salad, to serve
Cut the onions and cleave the garlic. Set a cast-iron skillet or ovenproof griddle (mine is 26cm over) over a medium-low warmth. Include the spread, oil, onions and garlic. Cook for 15 minutes, blending now and again, at that point include the squash.
Let the squash burn against the hot skillet for a moment or two, and afterward, working quick, include the pepper, nutmeg, the leaves from two of the thyme stalks (in case you're utilizing dried thyme, include everything now) and the white wine. Spread quickly with a top or foil, at that point turn the warmth down to low and leave to cook for 20 minutes.
In the interim, open the tin of chickpeas, flush in a colander and leave them to deplete in the sink. Mesh the Parmesan and beat the egg.
Take the cover or foil off your squash and taste: it ought to be delicate. Include the chickpeas, Parmesan and cream. Give it a decent mix and season. Expel from the warmth and let it cool for 10 minutes.
Pre-heat your stove to 180ºC/fan 170ºC/gas mark 4.
Unroll your baked good on a sheet of preparing paper, and cut out a circle marginally greater than your skillet – I utilize a supper plate for this, as a format. Utilizing the preparing paper to assist you with lifting it, slide the cake cover over the highest point of the squash, at that point cautiously utilize a fork to seal the edges of the baked good against the sides of the skillet. Prick an opening with the base of the fork in the focal point of the baked good top, at that point brush with beaten egg and disperse with ocean salt and the leaves from the rest of the thyme stalk. Move the skillet to the broiler and prepare for 15 minutes, or until the cake is brilliant and gleaming.
